Sweet Tooth


Seems it's the season for lemons. I have recently been making things that involve freshly squeezed lemon juice. I find it adds a lot of flavor and tastes delicious in all sorts of things. First the ice tea and now in the lemon bars. Perhaps lemon chicken next? We shall see! For now, I will stick to my sweet tooth! Here is a super simple recipe that takes a few minutes to put together and will have people coming back for more:

Lemon Bars

::Ingredients::

1 cup all-purpose flour
1/2 cup butter, softened
1/4 cup powdered sugar
1 cup granulated sugar
2 teaspoons grated lemon peel, if desired
2 tablespoons lemon juice
1/2 teaspoon baking powder 
1/4 teaspoon salt
2 large eggs
Additional powdered sugar



Step 1: Heat oven to 350 F


Step 2: In medium bowl, mix flour, butter and 1/4 cup powdered sugar with spoon. Press in ungreased 8-inch or 9-inch square pan, building up 1/2-inch edges. Bake crust for 20 minutes; remove from oven.


Step 3: In medium bowl, beat remaining ingredients except additional powdered sugar with electric mixer on high speed about 3 minutes or until light and fluffy. (I like to add 1/2 cup of flaked coconut to the egg mixture, it tastes great!) Pour over hot crust.





Step 4: Bake 25 to 30 minutes or until no indentation remains when touched in center. Cool completely in pan on wire rack, about 1 hour. Dust with powdered sugar. 


Don't worry, the mess is worth it....
